Beer Batter Fish Fry  (Read 32634 times)

Ingrediants Required
- 1-1/2 cups Flour
- 2 tsp Salt
- 1 tsp Pepper
- 1-1/2 cups Beer
- 2 tsp Seasoned Salt
- 1 tsp Seasoned Pepper
- 1 tsp Emeril's Original Essence, Optional
- 2 pounds Fish Fillets (or Nuggets), Catfish, Striped Bass, White Bass, Cod

Detailed Cooking Instructions
- Combine all the dry ingredients into a bowl. Note: That the Emeril's Original Essence is optional.
- Next, add beer and mix thoroughly. If more beer is needed to make the batter the consistency of pancake batter, do so in small increments.
- In a deep skillet, pour vegetable oil so it is about an 1-1/2" deep and then heat it on high. While waiting for the oil to heat up, add the fish to the batter and mix it so all fillets and/or nuggets are covered with batter.
- Check periodically if the oil is ready for cooking by adding a small drop of batter into the oil. If it begins to float soon after adding to the oil, then it is ready for cooking!
- Next, take the fillet and/or nuggets from the batter, and then one by one slowly place them in the oil.
- Cook for about 5" to 15" flipping them over at the half way mark. Note: The time will vary based on the size of the fillets/nuggets but as a rule of thumb, cook them to a golden brown color.
- Once cooked, lay on a plate covered with a paper towel or napkin to let soak up the oil from the fillets/nuggets.

I think I hear clickers in my sleep!!


Thanks for the tip and if you want more seasonings, add them as soon as you take them out of the oil and put them on the paper towel to 'drain'. 
While still wet from oil, the seasonings still very well as opposed to waiting until they are on the table.

Going to get a chance to use BigBuckeye's tip later today!

Fished Lake Lavon at Ticky Creek Park this morning. Ended up with five Keepers but let go one because it just did not look right. Fun stuff... having a Beer Batter Fish Fry later! Today's Video.

Bite was steady with 15 Keepers; largest went 19" in size. Most went for Shad that we caught by the boat ramp. Fun stuff with most caught in 11'-12' of water with hooks set 1' and 2' from the bottom. Today's Video.  More Beer Batter Fish Fry!

Caught more Catfish Saturday morning by Little Ridge Park. Tried out a different recipe and also a blackened catfish recipe. Tasted good... may need to post them as well!
