This is an incredible recipe and very easy.  It's also more Adkins friendly because it only has corn meal and parmesian Cheese.  This works for catfish, crappie, and sand bass.

Ingrediants Required

 Fillet your catch the way you like them.  I soak in buttermilk overnight and cut them up into finger size portions.

 Take equal parts of yellow corn meal and PARMESIAN CHEESE!

 Add a Tablespoon of Dill Weed (freeze-dried or fresh)

 Salt and Pepper to taste

Detailed Cooking Instructions

Mix the above according to how much you'll need to cover your fillets.  How hard is half and half?

Take the fillets out of the buttermilk and roll them in the cornmeal mix.

Heat your frying oil to exactly 375 degrees, drop those bad boys in, and let'em fry till brown. Note that the fillets won't float to the top like with other battered fillets.  You will have to look at the fillets when you see when the boiling slack off.

Take'em out and squeeze some fresh lemon on them!

Recommended sides:
  French bread, (toasted if you like) buttered with garlic salt
  Steamed Brocolli
  Tomato slices with goat cheese and basalmic vinegarette dressing.

Your tongue will slap your face!!
