Charcoal Grilled Sweet Potatoes w/ pecans  (Read 3605 times)

Ingredients Required:

1 sweet potato per person
1/2 cup chopped pecans
1/4 cup light brown sugar
3 tbsp margarine

Detailed Cooking Instructions:

Wrap sweet potatoes in foil and roast in the hot coals for 30 or 40 minutes with hickory or pecan wood for smoke flavoring (turn once halfway through).  After you turn the potatoes over put the chopped pecans on a piece of aluminum foil on the grill and sprinkle on the brown sugar and top with the pats of margarine and grill until sugar just begins to caramelize. Remove sweet potatoes and peel off skins and mash the potatoes and add roasted pecans to the mashed sweet potatoes.  Sweet potatoes cook faster than regular baked potatoes and also keep a close eye on the pecans as they can burn easily as well.

If it only takes one truck for the government to haul off all your guns then you don't own enough guns!
