Roasted Bell Pepper Vinaigette for Grilled Fish  (Read 2097 times)

Ingredients Required:

3 bell peppers
3 tbl extra virgin olive oil
2 tbl fresh orange juice
2 tbl finely chopped Italian parsley
1 tbl fresh lemon juice
1/2 tsp minced garlic
1/4 tsp ground cumin
1/4 tsp kosher salt
1/4 tsp Tabasco sauce

Detailed Cooking Instructions:

Roast bell peppers on grill until outside skins are well charred, remove from grill and place in paper sack or other airtight container to steam skins loose. Remove skins and seeds and slice into thin strips. In sauce pan combine all other ingredients and add pepper slices simmer for ten minutes then remove from heat and let stand for at least one hour or even refrigerate over night. To grill fish, brush filets with olive oil and salt and pepper and place on grill and cook for approx. 15 minutes over charcoal with hickory or pecan wood added for smoke flavoring. Warm bell pepper vinaigrette and pour over hot grilled fish and serve with chopped Italian parsley sprinkled on top if desired as garnish.
