The only way I cook turkeys anymore is frying! Real hot & faster! Once you eat a fried turkey you will never bake another one. 12 pound turkey done in 45 minutes or less.

As far as smoking...yep...still hot & fast. Poultry is not a tough cut of meat with a lot of connective tissues. So low & slow is not necessary to attain a tender product.

Low & slow cooking is necessary to break down the collagen (connective tissues) in tough cuts of meat. If you ever put cooked meat in a refrigerater and later see that brown jelly...that is fully rendered collagen. It should always be used as an aus jus and put back on the meat. Very tasty!
